With a history dating back to 1264, and priceless old soleras, Valdespino ranks as Sherry’s most historic and traditional house.
The bodega’s vineyard holdings are extraordinary, but it is their prized portion of Macharnudo Alto – one of the region’s oldest and most historic vineyards - that gives rise to Valdespino’s most renowned sherries : Fino “Inocente,” Amontillado “Tio Diego,” and their Palo Cortado “Calle Ponce.”
Valdespino is the only house today that still ferments their wines in cask, and they age wines far beyond the legal minimums. The Fino “Inocente” spends – on average – 10 years under flor!
Sherry vinegar offers one of the most distinctive tastes in Spanish cooking and this example, from one of Spain's finest sherry producers is amongst the best. Made using the same solera method used for the production of fino sherries. The result is a rich, nutty, yeasty, complex and deeply flavoured vinegar.
