SOSA Sodium Alginate is derived from Kelp and is known for its particular characteristic of forming gels in the presence of calcium. Like any other kind of hydrochloride, it needs some water content in order to hydrate. Mix with the desired elaboration (direct spherification) or mix in a water bath (inverse spherification). 

Use in any kind of liquid with a pH of 4 and water content higher than 80%. When using inverse spherification, always use mineral water. Can be difficult to dissolve in fatty mediums or those containing alcohol - depending of the degree of alcohol and lack of water.

Directions For Use

Dosage: 5g/Kg. Mix ALGINAT with the liquid that will give the taste. Sprinkle drops or bigger amounts of the mix carefully on a mixture of CLORUR. Remove with care and rinse with water for some seconds. Serve on the chosen surface. Properties: Gelling agent when interacting with calcium containing media. Use: Mix with desired elaboration (direct spherification), mix in water bath (inverse spherification) Application: Any kind of liquid with a pH >4 and water content higher than 80% (direct spherification) Observations: For itself, it acts as a thickening agent. To do the inverse spherification, always use mineral water. It is difficult to dissolve in fatty mediums as it encounters incompatibilities. Storage Instructions

Recommended keep at 15-25ºC, in a dry place out of light, in original packaging until use and closed. Use preferably within 24 months from production date. The specified shelf life can only be guaranteed for this product if the above mentioned recommended storage conditions are respected.
