Calasparra is a variety of round grain, (Medium length= 5.3 mm); that when cooked it increases its size by 70% in length and thickness; very resistant to paste (when grown in Calasparra, due to its low RH climatic conditions and fresh, clean water); 8.5% protein content; Broth absorption in paella (3.5 parts by volume of broth per 1 of BxS rice); Cooking time: 20 min.; Yield: 100 gr/portion.
