Semi-hard, rind washed cheese

Lyburn Gold is ripened for approximately 8-12 weeks, resulting in a creamy, smooth texture with evenly distributed small holes. It is a washed curd cheese, reminiscent of a continental Gouda, yet distinct in its own right. Although technically a hard cheese due to the pressing process, it is often classified as semi-hard because it retains some pliability at 10 weeks, making it excellent for melting.
